Our amazing baker Amy wanted to come up with the perfect cookie recipe for all of you 🙂 She wanted a recipe that was easy to deliver and even easier to make. But there were a few considerations, the recipe had to be delicious, gooey, healthy(fish) and had to be as good as all her other cookies. And boy O boy, did she deliver! What Ingredients are used to make Gooey Peanut Butter Oatmeal Cookies Kit?

  • Flour
  • Rolled Oats
  • Shredded Unsweetened Coconut
  • Cinnamon
  • Cornstarch
  • Baking Powder
  • Baking Soda
  • Salt
  • Virgin Coconut Oil
  • White Sugar
  • Brown Sugar
  • Maple Syrup
  • Peanut Butter
  • Vanilla Extract

  • Baking Pan, Sheet and Oven

How to make Gooey Peanut Butter Oatmeal Cookies Kit?

Add all the dry ingredients (flour, oats, shredded coconut, cinnamon, cornstarch, baking powder, baking soda, and salt) to a large bowl and mix to combine
Add coconut oil to a medium bowl and warm in the microwave for 15 seconds to soften slightly. Add water, brown sugar and white sugar and mix to combine thoroughly (use a hand or stand mixer if you have it, if not a fork and some arm muscle will do!). Add the maple syrup, peanut butter, and vanilla, mix to fully combine and then return to microwave for 15 seconds to warm slightly
Add dry ingredients to wet and mix to combine
Line 2 baking sheets with parchment paper or silicone baking mats. Form cookie dough balls about 2 tablespoons each, can use a cookie scoop if you have one. Place at least 2 inches apart, 6-8 cookies per sheet. Flatten slightly with a fork in a cross hatch pattern. Place baking sheets in fridge to chill for 20-30 mins
Part way through chill time, preheat oven to 350. When cookies are finished chilling put straight in the preheated oven and bake for 12 minutes, rotating the pans halfway through. Also if you have one pan on a lower oven rack and one on an upper one, swap them!
Remove from oven when slightly crisp on edges but still soft in middles. Let cool on baking sheets for 10 minutes before eating
