It's our favourite time of the year. The lights, the snow, the decorations, the carols, the extended family time. Sure, the newly enforced lockdown may have put a dampener on our usual Christmas plans, but that gives us even more of a reason to bake and eat delicious goodies- just the way we like it. Here are a few of our favourite recipes for the Holiday season.

  1. Baileys Egg Nog

We don't know what's more fun here. Making the Baileys Eggnog or the Tapioca Santa Bobas! Our amazing baker had this creative idea to make a simple eggnog more fun. Make it boozy and give it a little Christmas kick with homemade Santa Tapioca Bobas!

Ingredients: 

  • Organic Raw Cashews
  • Unsweetened Coconut Milk
  • Baileys Irish Coffee
  • Grade A Maple Syrup
  • Ground Cinnamon
  • Ground Nutmeg
  • Gluten Free Tapioca Flour
  • Culinary Food Coloring

Directions:

Soak the cashews for at least 1 hour. Mix coconut milk, soaked cashews, maple syrup, 1/4 cup water, nutmeg, cinnamon and baileys in a blender and blend. Chill for 1 hour.

Mix together Tapioca and 1/4 cup water and mix with your hands till you create a dough like texture.

Divide the dough into 3/4 for red (Santas hat) and 1/4 for white (Santas face). Add the red food colouring to the 3/4 dough.

Mix the red dough till the color is uniformly spread.

Shape the red dough into small cone shapes and white dough into small spheres. Use wet hands to combine both the doughs and make Santa faces. Boil water in a medium size pot and drop all the finished faces into boiling water. Boil for 20 minutes.

Let the Santa faces cool for 10-15 Minutes. Drop them into the chilled Baileys eggnog and enjoy :)

  1. Frosted Snowman Cookies

'Tis is the season to spend time with your kids, to go out in the snow and build a snowman, to laugh, to enjoy and most importantly to eat. So we decided to combine all of our favourite things about the season into one simple fun recipe to bake! This no-mess baking cookies require no oven or heat at all. Most importantly kids can get as creative as they want with the toppings and make each one slightly different. Best part? They are actually pretty healthy! 

Ingredients: 

  • Colorful Sprinkles
  • Homemade Chai Spice Mix
  • Colorful M&M's
  • Granulated Sugar
  • Cream Cheese - NOT SENT
  • Double Acting Baking powder
  • Iodized Salt
  • Pure Baking Soda
  • Pure Vanilla Extract
  • Butter-NOT SENT
  • All Purpose Flour
  • Granulated Sugar
  • Homemade Frosting
  • Mini Reese's Pieces

Directions:

Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper. In a medium bowl, combine the flour, baking soda, and baking powder.

Using an electric mixer or a whisk, in a large bowl beat together the butter, cream cheese, and sugar until light and fluffy for 2 minutes. Add the egg and vanilla and beat until combined.

Gradually add the flour mixture, mixing until just fully combined.

Roll the dough into two sizes of balls. 16 (1 inch, about 1 tablespoon) size balls, and 16 (1/2 inch, about 2 teaspoons) size balls. Flatten the balls so that they don't round up when baking. Then generously coat with the chai mix.

To make the snowmen, place 1 smaller baller and 1 larger ball together with the edges touching on the prepared baking sheet. Repeat with the remaining dough balls. Transfer to the oven and bake for 10 minutes or until the cookies are just starting to set around the edges. Let cool completely.

Layer the cool cookies with the frosting. Place half a mini Reese's atop the snowman's head. Use the mini m&m's as eyes and a nose. Use Sprinkles as the scarf. Let the cookies set in and enjoy!

  1. Baileys Chocolate Chip Cookies

Okay, look we know its Christmas and we know it's a time for celebration. So we decided to give you a little (delicious) punch with your Christmas treats, and snuck in some creamy and yummy Baileys in your chocolate chip cookies. But that's not all! These cookies also come with a hint of Espresso and Cocoa to give them a heavenly taste and smell.

Ingredients:

  • Ground Nutmeg
  • Ground Cinnamon
  • Grade A Maple Syrup
  • Unsweetened Coconut Milk
  • Baileys Irish Coffee
  • All Purpose Flour
  • Iodized Salt
  • 100% Natural Cocoa Powder
  • Dark Brown Sugar
  • Granulated Sugar
  • Semi-Sweet Chocolate Chips
  • Instant Espresso Powder
  • Organic Raw Cashews

Directions: 

In a small bowl, combine the flour, salt, baking soda and cocoa powder. Whisk to combine.

In a medium bowl add the butter, brown sugar, white sugar and espresso powder. Use a hand mixer or a whisk to cream the mixture together until very smooth.

Add the egg, Irish cream and vanilla extract and beat until very light and fluffy, about 2 minutes on high speed or 4 minutes with a whisk

Add the flour mixture in two additions, not adding more flour until the first bit has been incorporated into the batter. Add the chips and stir to combine. Refrigerate the batter for more than 40 minutes before baking. Preheat the oven to 375°. Line a baking tray with parchment paper. Scoop the dough onto the baking sheet, leaving 2" between each cookie to allow them to spread.

Bake for 5 minutes, remove the pan from the oven and whack the pan several times against a solid countertop or stove. Returm the cookies to the oven to bake for an additional 5 minutes. Remove from oven and sprinkle a few chips on each cookie, lightly depressing them into the surface.

Cool on the cookie sheet for 5 minutes before transferring them to a rack to cool completely. ENJOY!
